Pinche Tacos, Denver

If you speak any Spanish and are offended by the title of this post, don’t be! It’s a restaurant, so take up the naughty name choice with them! If you don’t speak Spanish but are intrigued, you can check out Urban Dictionary to see what I mean.

ANYWAY, yesterday was a big day as a certain Mr. HBL turned one year older and ostensibly wiser. To celebrate, we went to his favorite restaurant, Pinche Tacos.

 Pinche started out as a food truck and became a restaurant after their
tacos were written up in every Denver-based magazine as the best. food.
ever. And they weren’t lying! This place is pretty tiny, I guess not to depart too vastly from its food truck roots, so there is ALWAYS a wait. We got a Go Fish card and hung out on the stoop until they called our game. (I guess other waiting parties get cards like Old Maid, etc.)

 Once we were seated we got down to business: meaning ordering drinks and marking up the menu (its like a sushi place, you mark how many of a certain taco you want on a card).

 The lighting was weird because the sun was setting right in our eyes, but I think HBL looks happy as a clam anyway- just because tacos were on the way!

Even as a veg, I found enough griddled
cojita and avocado to eat my heart out. If you ever find yourself at Pinche, try the La Plancha. It’s only $2.95 for one and it is DIVINE.

If this face is any sign, I think HBL definitely had a very happy birthday- thanks to the peeps at Pinche Taco.
