My wonderful Aunt T shared this five-minute chocolate mug cake recipe with me when I was lamenting my sweet tooth and its erratic schedule. It is SUPER quick, easy, very chocolaty and, because of it’s small portion size, low calorie!
All you need is a microwave, general baking ingredients and five minutes for this delicious little cake of 250 calories.
My favorite addition is the chocolate chips- you run into these gooey little bits every now and again in the cake, which is DIVINE.
If you’ve a big enough mug (like the one above from Anthropologie) and a sharing spirit, this cake makes a great late night snack after a night out with the girls or a good dinner date dessert. I made it hastily for a dinner party with the family and we barely finished it amongst the six of us!
Five-Minute Chocolate Mug Cake
You’ll need…
4 tbsp. cake flour (not self-rising)
4 tbsp. sugar
2 tbsp. baking cocoa
1 egg
3 tbsp. milk
3 tbsp. canola oil
3 tbsp. chocolate chips (optional- but always good!)
a small splash vanilla extract
1 coffee mug
1) Add dry ingredients to mug and mix well
2) Add egg and mix well
3) Pour in milk and oil and mix well
4) Add chocolate chips (if using) and vanilla extract, mix
5) Put mug in microwave and cook for three minutes at 1000 watts
6) Cake will rise over the top of the mug- don’t be alarmed!!!!!
7) Allow to cool a little and tip out onto plate if desired. Yum!
