Baked Honey Goat Cheese and Tomato Pesto Pizza

You know those lazy Saturdays where all you want to do is lie in the sun? I’m having one of those. That’s why I wanted to spend about five minutes making lunch- so I could turn back around and go right back outside. So, as always, I used Pinterest as inspiration to make something quick n’ easy and utterly delicious.

Baked Honey Goat Cheese and Tomato Pesto Pizza

You’ll need:

1 wheat pizza crust (I buy mine at Whole Foods, but you can also make it if you feel so inclined)
1 large Heirloom tomato, sliced
1 jar Pesto, I like Classico brand (or you can make your own)
1 cup Cremini mushrooms, sliced
1/4 cup honey goat cheese (or goat cheese with honey drizzled over it), crumbled

Directions:

1. Preheat oven to 425 degrees Fahrenheit.

Lay crust out on pizza stone, or on clean counter top. Spread the pesto
evenly over the crust. While I like mine super light because pesto is
really flavorful, and thus have a lot left over, you can definitely use
the whole jar.

3. Layer mushroom and tomato slices on the pizza.

4. Bake for about 15 minutes, or until crust is golden and mushrooms are a light, shiny brown. Turn off the oven.

Remove pizza from oven and sprinkle goat cheese over the top. Place
pizza in the warm oven to warm up goat cheese for about 5 minutes.

Can’t complain with this easy, flavorful lunch. Try a little honey on your crusts, it’s a real Colorado tradition, and let me know how you like it!
